Baba Ganoush Recipe
Ingredients
- 2 aubergines (approximately 500–600g)
- 2 tbsp extra virgin olive oil
- 2 tbsp creamy sesame tahini
- 3 garlic cloves, sliced
- Salt and freshly ground black pepper, to taste
- 1 tsp smoked paprika
- ½ tsp ground cumin
- 6–7 fresh parsley leaves
- 1 tbsp fresh lemon juice
Method
- Wrap the aubergines individually in foil and roast in a preheated oven at 180°C for approximately 1 hour, or until completely soft.
- Remove from the oven, unwrap, and allow to cool for around 10 minutes.
- Slice the aubergines in half lengthways and scoop out the soft flesh with a spoon.
- Add the aubergine flesh, olive oil, tahini, garlic, smoked paprika, cumin, parsley, lemon juice, salt, and pepper to a food processor or blender.
- Blend until smooth and creamy.
- Transfer to a serving bowl and garnish with a drizzle of extra virgin olive oil, sesame seeds, and a sprinkle of smoked paprika.
- Serve with warm lavash, pita, or your favourite flatbread for the perfect sharing platter.
