Naturally sweetened with Medjool dates and honey, these no-bake bars combine oats, walnuts and seeds for a simple, satisfying snack. They’re quick to prepare and ideal for breakfast on the go, lunchboxes or an afternoon pick-me-up.

Ingredients
- 80 g Medjool dates, pitted
- 90 g honey
- 70 g peanut butter
- ½ tsp ground cinnamon
- 90 g oats
- 60 g walnuts, roughly chopped
- 30 g pumpkin seeds and sunflower seeds, combined

Prepare the date mixture
Blend the pitted medjool dates until smooth. Transfer them to a saucepan and add the honey, peanut butter and cinnamon. -
Heat
Warm the mixture over low heat, stirring continuously, until everything is melted together and forms a smooth, sticky mixture. Do not bring to a boil. -
Combine
Transfer the warm mixture to a bowl. Add the oats, chopped walnuts, pumpkin seeds and sunflower seeds. Mix thoroughly until all the ingredients are evenly coated. -
Shape
Line a small baking dish or container with parchment paper. Transfer the mixture and press it down firmly into an even, compact layer. -
Chill and cut
Refrigerate for 1–2 hours, or until firm. Remove from the dish and cut into 6 bars.
