Creamy Spaghetti Alfredo with Sun-Dried Tomatoes

This Creamy Spaghetti Alfredo with Sun-Dried Tomatoes is a quick and comforting pasta dish packed with rich Mediterranean flavours. Made with silky cream, Parmesan cheese, premium sun-dried tomatoes, and fresh parsley, it's an easy weeknight dinner that's ready in just 20 minutes and guaranteed to impress.

Ingredients

  • 50g sun-dried tomatoes, chopped
  • 2 tsp oil from the sun-dried tomatoes
  • 150ml cooking cream (single cream)
  • Salt and freshly ground black pepper, to taste
  • 130g cooked spaghetti
  • 30g grated Parmesan cheese
  • Fresh parsley, chopped

Method

  1. Heat a frying pan over medium heat.
  2. Add the chopped sun-dried tomatoes along with the reserved oil and cook for 1 minute until fragrant.
  3. Pour in the cream and reduce the heat to low.
  4. Season with salt and freshly ground black pepper.
  5. Simmer gently for around 2 minutes, allowing the sauce to thicken slightly.
  6. Add the cooked spaghetti and toss until evenly coated.
  7. Stir through the grated Parmesan and fresh parsley.
  8. Serve immediately with an extra sprinkle of Parmesan and freshly cracked black pepper.
