Crispy Feta & Olive Rolls

These Crispy Feta & Olive Filo Rolls are the perfect appetiser, party snack, or addition to a Mediterranean mezze platter. Creamy feta, fresh spring onions, and premium Palestinian black olives are wrapped in delicate filo pastry and fried until golden and irresistibly crisp. Quick to prepare and packed with authentic Mediterranean flavour, they're guaranteed to disappear fast!

Ingredients

  • 100g soft feta cheese 🧀
  • Handful of black Olive, chopped
  • 1 tbsp spring onions, finely chopped
  • 1 egg 🥚
  • Filo pastry sheets, cut into squares
  • Vegetable oil, for frying

Method

  1. In a bowl, combine the feta, black olives, spring onions, and egg until well mixed.
  2. Place a spoonful of the filling along one edge of a filo pastry square.
  3. Roll tightly, folding in the sides if necessary to keep the filling enclosed.
  4. Heat the oil over medium heat and fry the filo rolls for 2–3 minutes, turning occasionally until golden brown and crispy.
  5. Drain on kitchen paper and serve immediately.
